Varying the anchor text during your link building campaigns is paramount, but people tend to forget about doing the same within their own sites. Breadcrumbs are a fantastic way of doing it - just as you stated.
Another idea to keep in mind is not only to use breadcrumbs for varying the anchor text, but you can also actually use the same anchor text on different pages to link to other pages as well. For example, your home page may have a link whose anchor text is "web design", which obviously links to your web design page. However, it is also a good idea in a sub-page of your site (or perhaps a page with articles or other info), to link the same "web design" anchor text back to your home page if web design is an important part of your business.
Of course, your main menu (which appears on every page) would always link to the web design page so navigation wouldn't be a problem for the site visitor. So adding the same anchor text within a deeper page, but sending it to your home page can oftentimes be very effective.
SEO (Read google) has probably damaged the natural evolution of the web, getting a search ranking is now more important that getting your site up and running with original content. This is good internal SEO information. From what I can see from looking at SEOMoz rankings external links may or may not be a factor in ranking. A small number of high quality links out rank large numbers of low quality links and web sites with no links are often to be found in the top 10 ranked website. Its fairly easy to get a few high ranking backlinks from stumble, linkedIn and others.
